These super easy tarts are fantastically simple to prepare, and are always crowd pleasers. Sprinkle with some dried herbs for extra flavour.

  • 1 sheet shortcrust pastry
  • 12 slices cheese
  • 2 large tomatoes, sliced
  • black pepper

  1. Using a pastry cutter, cut out rounds of shortcrust pastry and place in a muffin tin. I tend to wipe each mould with a little butter, but that isn't essential.
  2. Place a slice of cheese inside each pastry case, then top with a slice of tomato. Sprinkle the whole lot with some black pepper to taste.
  3. Bake in a 200 C / Gas 6 oven until cheese is bubbly and pastry is cooked, about 10-15 minutes. Enjoy warm.

Made it healthier.I made the shortcrust pastry with a margarine with 60% fat, which saved a little fat compared with using butter.-09 Feb 2010(Review from this site AU | NZ)

I found this recipe very easy to make. I made the pastry myself, with a reduced fat margarine, to save a few calories! I used edam cheese, which can be a bit bland in baking, so I added some finely grated parmesan under the cheese slice. I shall definitely use this recipe again and again!
