American Pie with pumpkin it's one of the desserts I've always wanted to try. I kept seeing it in all the American movies and shows and I was wondering what it would taste like. We make pumpkin pie, but it is different from the American recipe, both as a filling and as a dough. Honestly, I've never been a big fan of pumpkin pie. My father likes them very much, and my mother made them every autumn, but I always prefer baked pumpkin with a little sugar. Grandma grows Turkish pumpkins, which she leaves in the garden until the frost falls. That way they were tastier.

He then baked them in the stove oven. Grandma has a stove with a hob and oven, and in winter she cooked on the stove and in the oven she baked pumpkin, apples or quince. It had the sweetest and best pumpkins and there was no need to put sugar on top of it, although we children always asked for sugar for pumpkin. Grandma didn't make the pie, maybe that's why I don't kill myself after her. But I tried the American one because I was very curious about its taste. In addition, I wanted to test the recipe in my new electric grill Tefal OptiGrill Snacking & Baking. It has a special accessory with which we can also bake.

I thought it was a great idea to be able to bake cakes in an electric grater. In this way, the grill is transformed into a complete cooking appliance. What I like about it is the fact that it is not an ordinary grill, but a high-performance one that automatically detects the thickness of the meat that we place on the cooking surface. In this way we can cook beef perfectly, whether we want it to be in the blood, medium cooked or well cooked. I used the Optigrill grill both to bake the pumpkin and to bake the American pumpkin pie, with the help of the snack and baking accessory.

The dough was tender, with butter, and they filled a fine one with pumpkin, whipped cream and eggs. I added sugar and sour cream for extra flavor and a sour hue. For the flavor I put cinnamon, but you can also put nutmeg, cardamom or cloves. I cooked the pie for 40 minutes in Optigrill until the filling was set. You can bake the American pumpkin pie in the usual oven at 150 degrees for 40-50 minutes. For another preparation made at Optigrill, you can follow the recipe roast beef with flavored butter.

Ingredients Apple Pie:

  • 150 grams of sugar (I used brown sugar)

Preparing dough for apple pie:

For the dough, I prepared a pate-brisee: I mixed the salt with the flour and the sugar in a bowl and I added the cold butter, cut into cubes (1). I incorporated the butter in the flour, with the help of the fork (do not put your hand on the butter, because it will melt and the dough will not be as tender) (2).

When the mixture in the bowl has a sandy appearance (picture 2) add the yolks and a tablespoon of cold water, kneading quickly until all the ingredients are gathered into a dough. Do not knead more because the butter would melt and damage the consistency of the dough. Wrap the dough and refrigerate for an hour (if it is kept longer in the refrigerator, it will not harm them at all).

Prepare the filling

Meanwhile, prepare the filling for the American apple pie, very similar to what I did for the apple and coconut cake: peel the apples and the seed box, cut them into cubes and mix with the sugar and starch. Add the raisins and put everything on low heat, stirring constantly until the composition boils and thickens. Add cinnamon, mix well and set aside until cool.

Assembly and baking

Preheat the oven to 180 degrees Celsius. The cold dough is divided into two and the first half is spread in a round sheet.

Roll the sheet on a rolling pin and roll it over a round shape that does not need to be greased.

Reach the edges of the dough to a height of 3-4 cm. then shape into the refrigerator until the second sheet is spread. After that, sprinkle a tablespoon of semolina on the base sheet and pour the filling.

The filling is covered with the second sheet. Press the edges inside and shape the ripples. Grow the dough in the middle and spread it with the yolk, then put the apple pie in the already hot oven. The secret of this dough is to put the cold dough in the hot oven. The butter will suddenly melt and create a specific sandy consistency.

Bake for about 45 minutes, until the pie is nicely browned. If it tends to burn on top, cover with a sheet of baking paper.

Allow the apple pie to cool in the form until it is barely warm. If necessary, peel off the edges of the form with a knife and then turn it over carefully on a flat plate. Immediately cover with the plate on which you want to serve and turn over with maximum caution over the plate. It is not desirable to break, God forbid! If desired, sprinkle with powdered sugar.

Authentic or not, I assure you that it was a delicious apple pie and all the diners were delighted with it.

Sprinkle breadcrumbs, then pour the filling and cover with the second sheet. Grease the top with melted butter and put the pie in the oven for about 45 minutes, until nicely browned on top.
