  • 1 leek, cleaned and thinly sliced
  • 1 carrot, peeled and cubed
  • 1 courgette, cubed
  • soft goats cheese

  1. Preheat the oven to 200 C / Gas 6.
  2. Bring 250ml water and stock cubes to the boil in a saucepan; add brown rice and cook until al dente, about 15 to 18 minutes. Drain the rice and stir in olive oil.
  3. Slice the top off the peppers and reserve as lids; scoop out seeds and white membranes with a spoon. Place the peppers upright in a baking dish.
  4. Fry the onions in a little olive oil in a frying pan; stir in garlic and stir to soften. Add beef mince and stir until broken up and browned. Season with ras el hanout, salt and pepper. Add the sliced leek, carrot and courgette; cook and stir until vegetables are starting to soften.
  5. Mix the beef mince and vegetable mixture with brown rice; spoon into the peppers. Crumble goats cheese on top of the stuffed peppers and place the pepper lids on top. Bake in preheated oven for 20 to 30 minutes.

Roasted Red Peppers with Pesto and Goat Cheese

You know I’ve been to Costco when you start to see recipes with pesto and goat cheese popping up frequently on the blog. I can’t help it. There are a few staples from Costco that I can’t be without and their pesto and goat cheese are two of them.

I have to admit, since trying the pesto from Costco I really haven’t made any at home – it’s that good (for store bought!) and you just can’t beat the convenience or price.

These Roasted Red Peppers with Pesto and Goat Cheese were inspired by my neighbor who made for us once and brought some over for me to try. He actually cooked his on the grill and wow, they were amazing. I could not wait to make them for myself. I wanted to try them on the grill, but honestly this past week here in Florida has been so brutally hot and muggy that the thought of standing over a grill “testing” a recipe just didn’t appeal to me. Roasting them up in my oven worked just as well, and I got to enjoy the a/c while doing it.

I picked up these adorable baby bell peppers at my grocery store. I’ve seen the very small mini bell peppers for a couple of years now, but I don’t recall seeing these baby bells before (picture them sized in between traditional bell peppers and the mini sweet ones). I’m a big fan! They are the perfect size – not too large, not too small.

If you can’t find the baby bell peppers you can use mini bell peppers.


Baked red pepper stuffed with goat's cheese and pine nuts recipe

Tulum peyniri is a traditional Turkish goat's cheese ripened in a goatskin casing. If you can get hold of it, great but this recipe will still taste good with a suitable substitute. Didem recommends that you try this recipe with peppers grown from the end of June to the middle of September and that have ample flesh and thin skins.

  • 80 ml olive oil
  • 2 garlic cloves, peeled and halved
  • 2 rosemary sprigs
  • 120 g tulum peyniri (or goat's cheese - see notes)
  • 1 bunch of basil

  • 1 garlic clove, crushed
  • 8 red peppers
  • 2.8 fl oz olive oil
  • 2 garlic cloves, peeled and halved

Step-by-step

  1. Place the peppers in an oven dish, drizzle olive oil and sprinkle salt over them. Put the garlic cloves on the peppers, add rosemary and freshly ground black pepper, and I cover the dish with aluminium foil and bake it for 1 hour at 180°C.
  2. Brown the pine nuts in a dry frying pan for a couple of minutes.
  3. Mix the cheese, finely chopped basil, pine nuts, currents and crushed garlic thoroughly in a medium-sized bowl and add some of the peppers’ juice from the cooking to this mixture.
  4. To peel the peppers easily, wrap them in plastic wrap and let them sweat for 15 minutes. After peeling the peppers, cut them along one side and remove the seeds, and then stuff the peppers with the cheese mixture.

Mini Bell Peppers Stuffed with Goat Cheese

This side dish is a way to take advantage of the mini sweet peppers that are showing up by the bag in supermarkets. They should be roasted briefly and not peeled.

My oldest brother, Dan, and his wife, Margaret, hosted a wonderful party in Minneapolis in May to celebrate their 50th anniversary. The savory food on the gorgeous vegetarian buffet was catered by the well-known Minneapolis restaurant Lucia’s, whose chef/owner, Lucia Watson, is a friend of the family. One of my favorite items was minipeppers stuffed with goat cheese, the inspiration for this recipe. Mini sweet peppers have begun to proliferate in supermarkets the ones I’m finding come in 12-ounce bags, roughly 12 to a bag (though they range in size, some being about two inches long, others about three), usually a mix of red and yellow. They are thin skinned, with very small seedpods and membranes. I roast them briefly to soften them and sweeten the flavor. There is no need to peel them, and they should not be roasted so long that the skin loosens. You will probably have a little filling left over, but it’s nice as a spread so it won’t go to waste. These will keep for 3 days in the refrigerator. Bring to room temperature before serving.

Peppadews, if you’ve never encountered them before, are sweet little peppers from South Africa. They are most often sold pickled and brined in jars, much like olives, and have a sweet, briny flavor with an oh-so-subtle kick (there are hotter versions available if you’re game). But otherwise totally mild, sweet even, especially when compared with the piquant posts earlier this week.

This recipe comes from my friend Beth, who recreated the dish from a local favorite (RIP Rumba). I added garlic and used basil in place of chives (thyme would work well, too!), but the general concept is unchanged: Take pepper. Stuff pepper. Eat pepper.

They make a great, easy appetizer, made up to 2 hours ahead of time and stashed until ready to serve (just resist the urge to sneak one here, two there, or they will be gone before your guests arrive).

A word of warning: peppadews ‘aint cheap. Get ready to spend upwards of $11/jar for these babies. But I don’t think I need to tell you that they are well worth it.

Cut the tops off your peppers and use a small paring knife to clean out the seeds as best as you can. Some peppers may not have any seeds, so just leave those be!

You can also cut the peppers lengthwise, but I feel that you can get more cheese in the pepper if you stuff the top instead, and honestly, I’m all about more cheese!

Get your goat cheese and spiced mixed together in a small bowl and use a small teaspoon to mix them. You can use the same spoon to stuff the peppers.

Place the peppers as upright as possible on a grill-safe mat or vegetable basket. We’ve also built little trays out of tin foil and that works just as well, too!

Grill at around 350-degrees on direct heat until the peppers start to soften and the skin starts to brown, about 5 minutes. Then move off of direct heat and continue to cook another few minutes until the cheese browns slightly. You may have some blackened spots on your peppers and that’s okay! They still taste great, I promise.

Remove from the grill and enjoy! We love to eat these with grilled chicken.


Recipe Summary

Core and seed the bell peppers. Cut each into six wedges, and place into a resealable plastic bag. Add the garlic and drizzle with olive oil. Toss, seal, and set aside to marinate at least 20 minutes.

Preheat an outdoor grill for medium heat, and lightly oil the grate. Stir the goat cheese and lemon pepper seasoning together in a small bowl set aside.

Cook the peppers, skin-side-up on the preheated grill until lightly charred, about 3 minutes. Flip the peppers over, and carefully spoon the cheese onto each pepper. Close the lid of the barbecue, and continue cooking until the bottoms are lightly charred and the cheese is warm, 2 to 3 minutes.

Because the Super Bowl is this weekend (is it awful that I don&rsquot even know which teams are competing?), I figured there would be no better time to share an updated version of the recipe, because, you guys, you&rsquoll never need another appetizer recipe ever again.

For reals, these stuffed sweet peppers fill any/all appetizer needs/requirements. Except, you might want to consider wrapping them in bacon. Fair suggestion.

This time around for the stuffing mixture, I decided to caramelize up an onion and mix it in with the cream cheese, along with some dried herbs. So.bloomin.simple..

The only labor-intensive part of this recipe is halving the sweet peppers and seeding them, but you can do this up to 1 day ahead of time.
