A delicious quick twist on the tradtional strawberries and cream. Quick to make and looks good when serving to guests for a desert, make it extra special by adding the optional vanilla essence and rose water.

- 565ml double cream
- 2 tablespoons caster sugar
- 1 tsp vanilla essence
- 9oz strawberries, sliced in half
- 9oz raspberries
- 1 tsp balsamic vinegar
- 1 tsp rose water (optional)

- Whip your double cream, with 1 tablespoon of the sugar and the vanilla essence, till soft peaks are formed. Be careful that it doesnt go lumpy.
- In a bowl, place half the strawberries, half the raspberries, the remaining sugar and the balasamic vinegar together and mash with a fork. Place the mixture along with the whipped cream in the fridge till you want to serve.
- When ready to serve, mix the mashed fruit and cream together, add the remaining strawberries, raspberries and rose water, fold mixture together
- Place your meringues in a bowl and break them up. Its good if you get a mix of small and big chunks for a good texture. To serve make layers of the meringues and cream mixture into desert bowls or glasses, and serve straight away
To make it extra special for a party, instead of breaking your meringues, have 1 large meringue per person, and serve with the cream mix in the meringue itself.

Eton not eaton.Still easy to follow.-04 May 2012
Eton Mess is a traditional British dessert made with crumbled up meringues, whipped cream, strawberry sauce, and fresh strawberries. Eton Mess is a perfect light dessert to serve during the summer. It comes together so easily, it tastes light as air, and you don’t need to turn your oven on if you use store-bought meringues.
I am not the biggest fan of meringues, but I love them in an Eton Mess. They absorb some of the liquid from the strawberry sauce and the whipped cream and they become more cake-like. You can love this dessert even if you don’t love meringues. I promise.
Eton Mess originated at Eton, the posh private school where Prince William and Prince Harry went. It is believed that the dessert was created to serve at an annual cricket match in 1893. The word “mess” refers to the loose assembly of the dessert. I love the no-fuss presentation of the dessert.
A traditional Eton Mess recipe is prepared with fresh strawberries, and I didn’t want to mess with tradition so I also used strawberries. You could use raspberries or blackberries instead.
I created my own strawberry sauce recipe based on my strawberry pie recipe. I combined mashed fresh strawberries, water, sugar, and corn starch to create a thick sauce that tastes like juicy strawberries.
You can make the meringues yourself, or you can use store-bought meringues. I live near a French bakery and I was able to buy a big bag of chocolate, vanilla, and lemon meringues. It was such a timesaver, and the three different flavors each paired so well with the strawberries.
I served Eton Mess as a dessert when we had friends over for a traditional British Sunday Roast. It just seemed fitting to serve a British dessert! I placed all of the ingredients in the center of the table and then everyone got to make their own dessert. Plus, since we had three different flavors of meringues, everyone got to pick their favorite or come up with a fun flavor combination.
I recommend against assembling the eton mess ahead of time, the meringues would get too soggy. It is better to assemble just before serving.
Strawberry Eaton Mess
Let’s be honest, life can be a bit of a mess from time to time. It can be exhausting, so a nice simple recipe is what we need. This is a spin on the Strawberry Eaton Mess, which is a popular dessert where I’m from. A mixture of cream, meringue, and strawberries, it’s painless to prepare. Strawberries and raspberries are my choices of fruit, but feel free to change this up to your own whims and taste. This recipe is from my cookbook.

First mentioned in print in 1893, it is commonly believed to originate from Eton College and is served at the annual cricket match against the pupils of Harrow School.
What is an Eaton mess?
Eton mess is a mixture of just three ingredients: meringue, strawberries, and whipped cream. Think of it as a different type of strawberry shortcake — crunchy meringue cookies stand in as a delicious alternative to cake, and instead of stacking, you get to toss everything together like a big old mess. what could be easier than this strawberry Eaton mess?
- Do not make your own meringue. Go to the store and you can buy meringue cookies. Trader Joes always has them.
- Buy fresh whipped cream and whip it fresh. I do not want to see any of that Reddi whip, even if it is super tasty. If you use can cream it flattens fast and does not stay together.
- If your strawberries are not super perfect, slice them in half and toss them in some sugar and let them rest for an hour or so.
- Toss in a crunchy nut and toss with mint also.

You need fresh strawberries for this Eton Mess dessert. Hull with a sharp knife to remove the green stem at the top of the strawberries.
To make the strawberries extra tasty, sprinkle them with caster sugar. You can skip this step if keen to save calories.

The next step is to whip the cream. Some people prefer the taste of heavy cream rather than whipped cream.
If you choose to use heavy cream, make sure you’ve got a hand mixer! It will be a lot quicker and easier, even when using whipped cream.
Otherwise, a metal or silicone whisk is fine, it will just take a bit longer. Carry on whisking until soft peaks form.
Whip the cream
Next, you’ll need to add the meringues to the whipped cream. We use ready-made meringues as they’re a big time saver.
There’s no real difference in taste between these meringues and ones you make yourself. Crumble the nests roughly with your hands.
The meringue pieces don’t need to be all the same size, just make sure they’re smaller than a thumbnail.

All you need to do after this is to add the chopped strawberries to the mixture, then spoon it into bowls or wine glasses. Top with a halved strawberry and an optional sprig of fresh mint.
Making Eton Mess
There you have it, an ideal no-cook Summer dessert. If you like, you can substitute bananas or raspberries for the strawberries or even mix a few together.

3 Get the fruit ready
Wash and hull the strawberries and cut in half or quarters, depending on size: they should be bite-sized in the finished dish. Put in a bowl, sprinkle with 50g caster sugar, toss very gently to coat and leave in a cool place to macerate for at least 20 minutes, until they begin to give up their juices.

No-Bake Eton Mess Cheesecake!
A Creamy, Sweet and Delicious No-Bake Eton Mess Cheesecake with Fresh Strawberries, Home Made Meringues, and oodles of Cheesecake Goodness!
It’s Summer, it’s hot.. and all I want is Eton Mess. I have made my Eton Mess with Homemade Meringues so many times I can’t count. However, I wanted to try something a little different. Therefore, Eton Mess Cheesecake happened! It’s a delicious mix of a classic Buttery Biscuit base for the base of the Cheesecake, with a Fresh Strawberry & Philadelphia filling.
It has freshly whipped cream on top, with some homemade mini meringue kisses, with even more fresh strawberries, meringues and freeze dried strawberries. I wasn’t too sure how to approach making the filling to be strawberry like. In reality, you can make it strawberry like by using a coulis instead of fresh strawberries like in my No-Churn Strawberry Cheesecake Ice Cream, but this time I went fresh.
I’ve tried this recipe several times now, and you can add a few more fresh strawberries to the filling, but you risk it not setting quite so much. I chopped mine quite fine, but they work in bigger chunks easily as well. If they are bigger, you can easily add more. I didn’t want the cheesecake to be overly strawberry flavoured, so I left it at that.
I made some homemade mini meringue kisses to top the cheesecake with, and they’re so much easier to make than you think. Simply whip the egg whites to soft peaks, and then start adding one teaspoon of caster sugar a time whilst whipping, and it’ll slowly turn into meringue! I used some Sugarflair Christmas Red Food Colouring to make my meringue kisses stripey, but this is entirely optional of course!
I honestly adore this recipe, and it’s the perfect summer dessert. If you’re not a fan of strawberries then you can easily make it with raspberries, blackberries, etc! I hope you love this as much as I do… ENJOY!
Lemon Curd Eton Mess
I am tempted to call this dish The Great Easter Meringue Salvage Operation, or The Waste-Not Rainy Day Face Saver. Instead, I’ll stick to phrases you might actually plug into a search engine — Lemon Curd Eton Mess.
The Eton Mess isn’t a new or particularly innovative way to use up less than perfect meringues. The classic British dish features sliced strawberries, broken meringues and whipped cream, all stirred together in a glorious mess. Curd is a recent addition to the mix that is as delicious as it is inauthentic.
After Easter was over, I had a generous cup of lemon curd and some very sulky mini pavlovas daring me to do something — anything — with them. Sheila on Facebook suggested Eton Mess while someone else, whose name got lost in the social media whirl, said to add blueberries. I obliged.
This isn’t so much a recipe as assembly instructions. If you don’t have blueberries, add raspberries, blackberries, or go traditional with sliced strawberries. Stewed, sweetened rhubarb would be a fine addition. I’m thanking Julie Van Rosendaal for putting that idea into my head.
If you don’t have lemon curd, forge ahead without it. Just stir the fruit and crumbled meringues into unsweetened whipped cream. Pile it into serving dishes, hand out spoons, and be grateful for the generous ideas from food-loving friends.
Eton Mess Recipe
This Eton Mess recipe is one of those underrated desserts I wish everyone would try. Creamy, light, fluffy and sweet with a hint of tartness from the berries make this simple, yet perfect dessert.
Whipped cream, crispy meringue cookies and stewed berries come together in an irresistible mess. Feel free to use any of your favorite seasonal berries. Strawberries, raspberries, blueberries, boysenberries, blackberries or any combination of berries you’d like.
- 150g strawberries
- 1 Kiwi fruit
- 2 tbsp double cream
- 2 tbsp icing sugar
- 1 ready made meringue nest
Wash the strawberries and cut into quarters, Reserve half of them for dressing and and in a small saucepan add the sugar and the remaining strawberry quarters and let simmer gently until the strawberries are nicely coated in the syrup. Remove from the heat and let cool.
Meanwhile, peel the kiwi and cut into slices and then into quarters, put aside and crush the meringue into pieces.
Gently mix the double cream with the cooled strawberry compote. Use a tall glass to serve and stack up with layers of the fruit, cream and meringue.
This recipe can work well with all your favourite fruits too!
Spoon into 4 glasses. Top with the strawberry quarters and a few mint leaves to serve.
Raspberry Eton Mess
Hiya everyone, hope you’re having a good week. I can’t lie, I’m ready for this week to be over. It’s been a really split week. Before we talk about the recipe for my Raspberry Eton Mess, let’s talk about this week.
The beginning of the week, we lost our cat, which was just devastating. However, the end of the week has brought some relief as something that’s been going on for 7+ months is finally over.
I can’t go into details, but I’ve alluded to the fact before about litigation going on. It’s finally all been settled, which means I can finally move on with my life.
The hurt is still there of course. Being accused of lying, people twisting things and suddenly denying they knew things. But, I just want closure now. It’s taken a huge toll on my health, both physically and mentally. It’s been so stressful and I’ve wanted to give up, but I knew I had to stand up for myself.
I’ve been totally put off working outside the home though. I feel like I would have to permanently record everything, so if someone doesn’t do paperwork or changes what they say, I can prove how it really happened.
I don’t think that would be healthy though, so I’m just going to stay home. I’d only be able to do office based work anyway after all this, which just isn’t me, so yeah…. Staying home forever!
I mean, I only got a job outside of the home because I thought it would do me some good to actually speak to people and not be cooped up all week. Look where that got me. It’s just not worth it to me anymore.
OK, now we’ve covered that, let’s talk Raspberry Eton Mess. I know a “normal” Eton mess has strawberries. Although strawberries are my first love, I wanted to try this recipe with raspberries.
Their tart, but sweet nature lends itself to being the perfect compliment to sweet meringue. It really balances out the sweetness, but still gives you that juicy burst of fruit.
The best thing? They are ready in 5 minutes and are no bake!
All you have to do is whip some cream with a little vanilla and sugar, add in pureed raspberries and crushed meringue, then spoon the mixture into glasses before garnishing with more crushed meringue and whole raspberries.
You can make this the morning of a family gathering and then assemble when it’s time to serve. Or you can make and assemble them 2 hours ahead of time.
