Bread pudding, bananas and nuts

Grease the bowls with butter and line them with brown sugar.

Cut the bananas into slices and put them in bowls. Half a banana for each bowl.

Oat pudding

Method of preparation:

I grind the bananas and add the eggs, oil and milk. Mix, then add the oats and baking powder. Optionally, add seeds, protein powder, coconut, etc.

You can even put fresh fruit or from the freezer. I always use raspberries and blueberries. Transfer everything to a bowl greased with oil and cook at 180 ° C for about 30 minutes, until nicely browned.

I usually serve it with Greek yogurt, fresh fruit, nuts and agave syrup. I think it would work great even with jam.

Walnut pate with garlic

Some time ago I tasted a walnut pate with garlic, made by a lady I don't know. I was with some dear friends who had received him as a gift. It was crazy. Extraordinary of tastes. It kept in my mind, and now it's his turn.

I'm really excited about what came out of it. It seems to me that the taste is the same as the original, maybe it was a little finer in texture. I only made it from a cup of nuts as a test, and it was more difficult for the robot to work with a small amount. But next time I'll put more nuts.

1 cup hydrated nuts 8 hours
1 small garlic clove
1 tablespoon cold pressed olive oil
2-3 tablespoons water
Himalayan pink salt (to taste)

We put all the ingredients in the robot, except the water. We process and gradually add water to help us get a paste as fine as possible. We add a little because we don't want the pate to be too soft.

Because walnuts have been soaked in water for 8 hours, they are much easier to digest.

It can be eaten on wholemeal bread, with vegetables or directly with slices of vegetables & carrots, celery, peppers, radishes, etc.

  • 1 pinch of salt
  • 4 tablespoons oil (I used walnut oil, it gave a wonderful taste to the dough, but you can use any vegetable oil with a neutral taste)
  • 2 tablespoons chopped walnuts with a knife
  • topping: banana slices, chopped walnuts, honey or maple syrup
  • in addition: oil for waffle press

Preparing Waffles With Bananas And Nuts, Fasting:

1. Peel the bananas, put them in a bowl and pass them with the hand blender or even with a fork, until a fine puree is obtained.

2. Add carbonated mineral water, it will make a lot of foam (picture 1). Add flour mixed with baking powder, salt, agave syrup or honey, vanilla sugar, oil and nuts (picture 2).

3. Mix everything with the pear-shaped target until smooth. Be careful, depending on the size of the bananas and the ability to absorb liquids from the flour used, you may need a little extra mineral water or, conversely, a little extra flour. The dough should have a slightly denser consistency than the pancake dough (picture 1 in the collage below).

4. Meanwhile, turn on the waffle maker and heat it well to the highest position (picture 2).

5. After it is well heated, the waffe press is greased with a brush soaked in oil, on all sides that will come in direct contact with the dough.

6. Put 2-3 tablespoons of dough right in the middle (I put 3 tablespoons, they were neither too thick nor too thin and came out exactly as large as the diameter of the press).

7. Bake the waffles one by one until golden brown, I like good and slightly crispy browns, this takes about 3 minutes for each piece.

Serve the waffles immediately, with fresh banana slices and walnut kernels, sprinkled with honey or maple syrup to taste.

Put the composition in the trays and put them in the oven for about 40 minutes. It is ready when a stick inserted in the middle of the cake is no longer glued. Remove from the oven and let them cool on a wire rack for 15 minutes. It is delicious!

This cake is a variant of an American "banana bread" recipe, I made many changes to try to make it healthier, without too much fat and not too sweet, like the original recipe.
I split the composition in two and added only half nuts because none of my girls eat nuts!
It is eaten for dessert, with a spoonful of vanilla ice cream, for breakfast with a glass of milk or orange juice, or as an afternoon snack.

We put the dough in the mold and cook the bread for 60 minutes and with a temperature of 150 ° C.

Once the bread is cooked, take it out of the oven and let it cool to room temperature.

When it is completely cold, we can peel it off. We will let the bread rest for 12 hours before eating or serving it.
