Method

How to make potato croquettes with cotechino heart

Wash the potatoes well without peeling them, then boil them for 25 minutes in already boiling and lightly salted water.
Drain the potatoes, peel them, mash them with a potato masher and let them cool.

Meanwhile, cook the cotechino too. I used a precooked cotechino to save time: put it with all its aluminum wrapping in a pot full of cold water, bring to a boil and then calculate 20 minutes of cooking.
Then remove the package, eliminate the liquid that will have formed inside, peel the cotechino and cut it into 12 pieces.

Once the potatoes have cooled, add the yolk, cheese, salt and nutmeg and mix.

Take back the cotechino and wrap each cube with the potato mixture.
Pass the croquettes thus formed first in the flour, then in the beaten egg and finally in the breadcrumbs.
Fry in hot oil, stirring them from time to time until they are evenly browned.

600 g of potatoes (we always increase the dose to approximately 1 kg, obtaining approximately a dozen pancakes)
2 spring onions (we don't put them)

MY PASTRIES

Baked potato and zucchini croquettes

  • 20 gr of grated Trentingrana
  • 2 sprigs of thyme
  • Flour

Potato croquettes with cotechino heart - Recipes

The heat and the sun continue for the moment and the desire to go on vacation grows more and more. unfortunately it is not possible for the moment and we must be satisfied with recreating some exotic flavor at home, which reminds us of summer and possibly the sea.
And this is how these croquettes are born .. a mix of tasty ingredients such as crab meat and lime accompanied by a fresh seasonal salad and cherry tomatoes.

Ingredients for two people:
125 gr of crab meat
50 grams of basmati rice
1 egg
1 slice of loaf bread
bread crumbs
Salt to taste.
1 lime
corn or seed oil
extra virgin olive oil.
cherry tomatoes type datterino
salad to taste

Prepare the drained white rice.
Mix the crab meat with the rice, a pinch of salt, the egg, the grated rind of a lime and the slice of chopped loaf of bread.
With the mixture obtained, form balls, pass them in the breadcrumbs and then mash them a little to form small sticks.
With these doses it is possible to prepare a dozen croquettes.
In a pan heat the corn (or seed) oil and fry the croquettes on both sides for a few minutes.
Drain them on a sheet of absorbent paper.
Dress the salad (in my case songino) and the cherry tomatoes with the juice of a squeezed lime, salt and a drizzle of extra virgin olive oil.
Serve by placing the croquettes on top of the seasoned salad.
